If you prefer this version, the grated rind and brownish edges can serve as an indicator. If there is one type of soft cheese that is particularly easy to recognize, it is the soft cheese with a red surface. However, there are big differences in this type of soft cheese. For example, there are soft cheeses without a real rind with a surface that has a strong character due to the way it is smeared. On the other hand, there are varieties that are characterized by their fine, tangy interior, which becomes particularly creamy as they mature. These two varieties also differ significantly in aroma and taste. One has an intense cheese aroma and slightly sour notes and becomes more intense over time, while the other impresses with its delicately spicy note and particularly creamy texture.

Blue cheese - for many gourmets the crowning glory of the cheese trade. At a young age, they tempt the connoisseur with their slightly sour and delicately spicy aroma, which they owe to the blue mold. The expert eye recognizes the degree of ripeness primarily from the inside - where the matt, white to creamy yellow paste is streaked with veins of blue mold. If you prefer an intense taste, which can range from spicy and piquant to sweet, look out for as many blue mold veins as possible in the dough. Advanced abrasion of the surface, brownish edges and shiny cut surfaces can also be a sign of a higher degree of ripeness and therefore a more pronounced aroma.

How do I determine the ripeness of a cheese?

Every soft-ripened cheese undergoes an exciting maturing process - even in your own home. This process changes the flavor, consistency and appearance of the soft cheese. Generally speaking, the more mature a soft cheese is, the softer it becomes and the more intense its aroma and taste develop. The quarky core area on the inside becomes progressively smaller until it melts completely into the paste. As a result, the latter becomes evenly creamy and begins to shine.
